Banquet Chef Job Description

If food is your passion, consider becoming a banquet chef. Banquet chefs essentially function as the executive chef's culinary second-in-command wherever food is served, such as in hotels, resorts and restaurants. Long shifts and extended periods on your feet are the norm for this career, which requires you to supervise everything from menu planning and food preparation to kitchen staff performance and customer relations.

Food Preparation

Banquet chefs make sure that all cooking follows the executive or head chef's vision. This process includes checking the freshness of ingredients, developing recipes and deciding how food is presented. To ensure consistency and customer satisfaction, he plans menus, ensures uniform serving sizes and develops recipes. He relies on high-quality grinders, knives and meat slicers -- plus large step-in coolers -- to accomplish his goals.

Kitchen Management

At most establishments, the banquet chef hires, trains, schedules and supervises cooks and all other kitchen workers. He also regularly inspects all food preparation areas to ensure cleanliness and compliance with kitchen safety standards. These functions are natural to assume, since most banquet chefs learn on the job themselves -- often by starting as line cooks. However, more chefs are seeking formal training at culinary arts and technical schools, or two- and four-year colleges, to advance their careers.

Operations and Planning

Roughly 13 percent of all chefs and cooks were self-employed in 2012, the US Bureau of Labor Statistics estimates. Banquet chefs in this situation fill more of an executive role, with little or no public contact. He focuses on keeping the business profitable by regularly paying salaries and bills, while monitoring fixed costs such as rent, supplies and utilities.
